This elegant Cabernet Sauvignon was born as a result of a precise fermentation process control, a long maceration of 28 days and 6 months of ageing in oak barrels. Packaging: 6 x 750 ml cases and 12 x 750ml cases. Features Winery:

Vineyard age: 13 years old. Our vines are trained with vine arbor “parral”or trellis (“espaldero”) systems and they are cultivated in the traditional way. Activities such as pruning, cluster thinning, canopy management and hand-harvesting are performed by our own qualified crew. Fermentation: Cold Pre-fermentative maceration for 72 hrs. Completely fermented in stainless steel vats at controlled temperature between 25 ºC. Maceration of 28 days. Natural malolactic fermentation. Climate and soil: The weather is mild anddry, with sunny days and cool nights; and with a wide thermal amplitudebetween daytime and night-time, thus contributing to an excellenttannin development and a very good color and aroma concentration in ourgrapes.The soils are of alluvial origin, ranging from deep to shallow,rocky, with good drainage and moderate fertility. Vinification process: During the grape-picking season, all our grapes are hand picked and carried in plastic boxes of around 40 pounds (18 kg), reaching the winery in the most favourable conditions, where after a careful selection, the winemaking process begins. Man and technology interact in order to achieve excellence. After these initial steps, fermentation is carried out in stainless steel vats with selected yeasts at controlled temperatures. Afterwards, the wine rests and reaches its maturity in new oak casks. Depending on the wine to be made, it will complete its ageing in these casks or it will define its personality while resting in the bottle.
