Region: Northwest - Salta Year of harvest: 2007 Aging: Use of special yeast to enhance the fruit. Bottle capacity: 750.00 ml. Alcoholic graduation: 13.50 % Suggested retail price: $ 25.00 pH: 3.45 Total acidity: 6.45 g/L Residual sugar: 2.00 g/L Harvest: End of March 2007. Vineyards: 7 years old vine (espalier) from Cafayate (1.800 mts ; 5.800 feet), Province Salta, Argentina. Yield12.000 kilos per hectare (10,400 pounds per acre). Fermentation: Alcoholic fermentation at 13ºC. during 15 days. Climate and soil: El suelo es pedregoso. El clima es frÃo (250-300 mm por año). Vinification process: Hand harvest in 15 kg trays. Manually sorted. No crushing. Cold pre-fermentation maceration during 1 day at 5ºC. Cold decanting during 2 days at 4º C. to allow solids to drop. PH correction at 3.2. Use of special yeast to enhance the fruit. Alcoholic fermentation at 13ºC. during 15 days. No wood. Elaborated in Salta, North of Argentina. Sur de los Andes winery was borned with the objective of producing premium argentine wines of an excelent relation between quality and price, centering our production in the three tipical argentine varietals: Malbec, Bonarda and Torrontés. Working with limited productions and with the passion and professionalism that this demands to offer really different wines.
